Southern Sweet Potato Pie

Ingredients
  

For the Sweet Potatoes: 3 large sweet potatoes (about 2 lbs)
Pie Filling:1 ¼ cups granulated sugar1 stick (½ cup) unsalted butter, melted2 large eggs1 teaspoon vanilla extract1 teaspoon ground cinnamon½ teaspoon ground nutmeg½ teaspoon ground ginger (optional)½ teaspoon salt½ cup evaporated milk½ cup whole milk1 tablespoon all-purpose flour (to help filling set)
Pie Crust:1 unbaked 9-inch pie crust (store-bought or homemade)

Method
 

Directions 1. Cook the Sweet Potatoes Peel sweet potatoes and cut into chunks. Add to a pot, cover with water, and boil until fork-tender (about 20 minutes). Drain and mash until completely smooth.
    2. Make the Filling In a large bowl, add mashed sweet potatoes. Mix in sugar, melted butter, eggs, vanilla, cinnamon, nutmeg, ginger (optional), and salt. Stir in evaporated milk, whole milk, and flour until smooth and creamy.
      3. Fill the Crust Preheat oven to 350°F.Pour sweet potato filling into the unbaked pie shell. Smooth the top with a spatula.
        4. Bake Bake for 55–60 minutes or until the center is set. Remove from oven and let cool completely before slicing.

          • Serve slightly warm or chilled
