For the Sweet Potatoes
- 3 large sweet potatoes (about 2 lbs)
- Water for boiling
Pie Filling
- 1 ¼ cups granulated sugar
- 1 stick (½ cup) unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger (optional)
- ½ teaspoon salt
- ½ cup evaporated milk
- ½ cup whole milk
- 1 tablespoon all-purpose flour (to help filling set)
Pie Crust
- 1 unbaked 9-inch pie crust (store-bought or homemade)
⭐ Directions
1. Cook the Sweet Potatoes
- Peel sweet potatoes and cut into chunks.
- Add to a pot, cover with water, and boil until fork-tender (about 20 minutes).
- Drain and mash until completely smooth.
2. Make the Filling
- In a large bowl, add mashed sweet potatoes.
- Mix in sugar, melted butter, eggs, vanilla, cinnamon, nutmeg, ginger (optional), and salt.
- Stir in evaporated milk, whole milk, and flour until smooth and creamy.
3. Fill the Crust
- Preheat oven to 350°F.
- Pour sweet potato filling into the unbaked pie shell.
- Smooth the top with a spatula.
4. Bake
- Bake for 55–60 minutes or until the center is set.
- Remove from oven and let cool completely before slicing.
